They’d avoid doing so if at all possible. Obviously can’t legislate for illness, but other than that a healthy person can easily go a number of hours without pooping, enough to cover a launch or spacewalk. They might well take precautions beforehand as you suggest.

Just pointing out… The new MegaMax Air is advertised to hold 34 ounces, or exactly 1 liter, and is made in China… (though we all know it can hold way more than that!)
